Filler Ingredients:
You can prepare either a vegetable or a chicken roll depending on your choice. In either case, make sure that the ingredients are fried, cooked and boiled to the optimum levels.
CHICKEN
Ingredients:
- 1 cup of cut and grilled chicken, Cinnamon powder
- Pepper powder
- Fennel seeds
- 3 to 4 pieces of red chile
- 1-2 tsp butter
Directions:
Add the ingredients in a small bowl and mince them thoroughly. You can either steam boil the mix or cook it on a non-stick skillet for about 2 to 3 minutes. If this is the case, after placing the skillet on the stove, preheat it for a couple of minutes. Add butter. Once it is melted, you can cook the mix until light brown.
VEGETABLES
Ingredients:
- 1/2 cup boiled corn kernels.
- 1/2 onion
- 1 boiled and mashed potato (optional)
- 3-4 pieces of red Chile
- 1 tsp vegetable or almond oil
- Saffron powder, cardamom, coriander powder and fenugreek to taste.
Directions:
Cut the onion into fine slices, add the spices and cook in a pre-heated non-stick oiled skillet for about 2 to 3 minutes.
Add the corn, the potato (optional) and chiles and stir for about 2-3 minutes until it turns light brown.
Corn Tortillas
Ingredients:
- 3 cups of corn flour
- 1/2 cup of soybean flour
- 1/2 tablespoon of baking powder
- 1/2 cup of plain flour
- 1 1/2 cup water
- 1/2 stick butter or margarine
Directions:
Take a large bowl and mix the ingredients; add water slowly preparing a fine dough. If you are fond of spices, you can add powdered cardamom, peppercorn and red paprika to make it hot and tasty. Knead the dough with your hands to make it extra soft. Once the dough is ready, let it stand for 10 to 15 minutes. Later, you can add the butter or margarine and knead the mix once more to soften the dough. Divide the dough into equal portions. Roll them into approximately 8-inch circles. You can decide on the thickness of the tortillas depending upon your choice. However, a fine tortilla 2 to 3 millimeters thick is your ideal for delicate rolls. Take a non-stick skillet and place it on a low flame. Preheat the skillet for about two to three minutes. Cook the tortilla with cheese or butter until it becomes golden brown on both sides. Make sure it does not get too crispy or it may break. Now, spread the ingredients on the tortilla, roll and serve.
